Those allergic to gluten, eggs, and dairy products can substitute them in their baking recipes using healthier alternatives.
For instance if a baking recipe call for milk, one can simply substitute it with soymilk. It has a thick consistency and the amount used is the same. Canola oil or Earth Balance can be used as an alternative for butter in baking recipes, but in that case, the egg content needs to be increased by 25%. 10 tablespoons of canola oil or a cup of Earth Balance can substitute each cup of butter used in baking recipes. If eggs seem to be the issue, they can be replaced with half a mashed ripe banana with 1/4 teaspoon of baking powder in baking recipes. One tablespoon of powdered flaxseed soaked in three tablespoons of water also does the trick. Wheat flour too can be substituted in baking recipes. Mix one part soy flour, one part tapioca flour, and two parts of brown rice flour and voila! The flour is ready.

If you are stuck in a breakfast rut, then a baking recipe for blueberry buttermilk scones may be just the thing to snap you out of it and make breakfast fun again. It is not hard work to make these scones, and takes less than fifteen minutes to complete.
To make 8 scones, you need to preheat the oven to 400 degrees, and make the dough in a food processor with 2 cups plus 2 tablespoons flour, 1/3 cup sugar, 1 teaspoon baking powder, ¼ teaspoon baking soda, ¼ teaspoon salt, and 6 tablespoons butter. Pulse until the mixture looks like course crumbs and transfer to mixing bowl. Add ½ cup buttermilk, 1 large egg, 2 teaspoons of vanilla, and 2/3 cup soft dried blueberries which have been whisked together, and stir until combined. Pat the dough into an eight-inch circle on an ungreased baking sheet, cut into eight wedges with a knife, and bake 17-20 minutes.

Making a single-layer coffeecake is quick and easy, and frosting isn't even necessary. All that's needed is a simple sugar icing for this kind of cake to taste its best. Baking tips from Nestle recommend incorporating instant coffee granules into the cake, making it the perfect treat for coffee lovers.
The cake is easy to make by combining all the dry ingredients into a large bowl and the eggs, sugar and butter in another bowl. The coffee granules go in with the eggs and sugar, and add some vanilla and sour cream as well. Then you combine all the ingredients, and make the crumb layer separately. You spoon half the batter into a prepared pan, and top with half the crumb mix, then pour the remaining batter over the mix and top with another layer of crumb mix. You then just bake for 50 minutes, ice it with a confectioners' sugar glaze, and its good to devour.
